As Miss Leslie Knope says (hello Parks and Rec fans!), Galentine’s Day is “only the best day of the year!” And we would have to agree! We're so lucky to be surrounded by a community of amazing, talented and supportive women in Nashville, and what better way to celebrate than with yummy food and drinks!? This year, we served sweet and savoury crepes and cran-mango mimosas, as well as an assortment of Galentine’s goodies including donuts and cookies.
We love sharing Valentine’s Day with our sweeties, but for us, the month of February is also about celebrating friendship. Some of our friends are married with kids, some of our friends are in relationships, and some of our friends are single – so Galentine’s Day is a fun way to include all of our favourite gals and celebrate the love we have for our friends!
SWEET VANILLA BERRY CREPES
Crepes:
1.5 cups flour
1 tablespoon baking powder
3 tablespoons sugar
1 teaspoon salt
2 eggs
¾ cup of almond milk (unsweetened)
¾ cup of half & half
1 teaspoon vanilla
Additional ¾ cup of almond milk to add as needed
Toppings:
1 cup sliced strawberries
1 cup fresh blueberries
¼ cup powdered icing sugar
Mix dry ingredients. Whisk eggs, ¾ cup of almond milk, half & half and vanilla. Stir dry mixture into wet mixture. Add additional almond milk until consistency is like a smoothie. We like to air on the runny side for crepes.
Use a 10” non-stick frying pan or crepe pan. We spray with a light spritz of non-stick cooking spray before cooking each crepe. Turn heat a little above low, and let the pan heat up fully before you start. Pour ¼ cup of batter in the pan. Quickly swivel pan in a circular motion so the batter covers the entire pan and forms a thin crepe. Cook for 1 minute on each side or until golden brown. Garnish with strawberries, blueberries and a dusting of powdered icing sugar. We also had bananas, nutella, and maple sugar as alternative toppings (yum!)
CRAN-MANGO MIMOSAS
1 part cranberry juice
1 part mango juice
2 parts sparkling wine
1 fresh strawberry (for garnish)
Best served with good company and girl talk!
